Hash Brains

Another wonderful treat for Halloween dinner!


Vegetable oil

3 lbs. baking potatoes

1 small onion, grated (I prefer to use Vidalias for this but any will do)

2 eggs, lightly beaten

Salt and pepper


Directions:  Preheat oven to 400 degrees F.  Line your baking sheet with parchment and then lightly grease it with the oil.  Shred the potatoes and then soak in a large bowl of cold water for 10 minutes.  Drain and wrap up in a tea towel to squeeze excess moisture out of them.  Stir together the drained potatoes, onions, eggs, salt, and pepper.  Divide this potato mixture into 6 even parts and place them in mounds on the lined, greased baking sheet.  Brush each of the potato mounds with oil.  Bake for about 35-40 minutes until they are golden brown.  Allow them to cool slightly and then stack each mound on top of another to make 3 double mounds of hash browns.  Shape each of these mounds into ovals and use the side of your hand to form a crevice into the middle to form the division between the two lobes of the brains.  Pour ketchup around each “brain” to serve as the blood leaking from it.
